The two main white teas are Silver Needle (Bai Hao Yinzhen) — only the finest spring-picked buds, downy and silver-white in dry form — and White Peony (Bai Mu Dan) — buds plus the first one or two leaves, with more body and slightly stronger flavor. Both are grown almost exclusively in Fujian Province, China, with Sri Lanka and Sri Lanka producing some quality alternatives.

White tea is a quiet pleasure. There's no morning-wake-up boldness, no malty depth — just an elegant cup that rewards slow attention. It's also the lowest-caffeine real tea (15-30mg per cup). Excellent evening drinking, excellent for first-time loose-leaf converts who want low-pressure brewing.

Silver Needle vs. White Peony

Silver Needle: only buds, more delicate, more expensive (often $60+ per 100g for top grade). Sweet, floral, ethereal. White Peony: buds + leaves, fuller-bodied, more affordable. Better choice for daily drinkers and beginners.

Brewing white tea

Use 175-185°F water (not boiling). 2-3 minutes for first steep. White tea forgives overbrewing better than green — it doesn't turn bitter — but 8+ minutes flattens the flavor. Re-steep loose leaf 2-3 times.

Aged white tea

Like pu-erh, white tea can age beautifully — 5-10+ year aged white tea develops honey, fruit, and date notes. Tealyra and other specialty importers carry aged white teas at premium prices.

Antioxidants
