Why hard water ruins tea
Hard water carries dissolved calcium and bicarbonate. Researchers at ETH Zurich (Giacomin and colleagues, Soft Matter, 2023) showed the film on tea is made of tea polyphenols bound to calcium and bicarbonate ions from tap water: brewed with distilled water, no film formed at all. The harder the water, the stronger the film. In their tests, water at 200 mg/L calcium carbonate produced a film many times stronger than soft water at 50 mg/L. That builds on a 1993 Nature paper by Spiro and Jaganyi, which identified calcium and oxidised polyphenols as the cause of tea scum.
Yorkshire Tea's own water explainer adds the kettle side: when hard water boils, calcium bicarbonate turns into insoluble carbonate, which you see as scale in the kettle or a slight film on hot drinks. It notes the film is completely harmless. The problem is taste and appearance: a dull cup with a skin on it.
Four fixes that work with any tea
- Filter or soften your water. The film needs calcium and bicarbonate; take them out and it cannot form. Look for a filter that states it reduces limescale or hardness.
- Add lemon. In the ETH Zurich study, citric acid dramatically weakened the film by binding the calcium. A slice of lemon in black tea is the classic fix.
- Add milk. Milk proteins reduced the film's strength about tenfold in the same study, though they changed its structure rather than removing it.
- Descale your kettle. Scale is the same calcium carbonate; a clean kettle stops old flakes ending up in the cup.
Sugar also reduced film formation in the study, if you take it anyway.
Do I have hard water?
Signs include white scale in your kettle, spots on glassware, and soap that does not lather well. Your water utility publishes a hardness figure, usually in its annual water quality report. As a rough guide, the study above used 50 mg/L calcium carbonate as soft and 200 mg/L as hard.
